Lovely Leek Soup

From the allium family and the skinny cousin of the onion, garlic and shallot. Leeks are really versatile and in season. Our Lovely Leek soup serves four and can be used as a starter or as a quick mid-week meal when your not looking for anything heavy but still want something warming and comforting.

 

Leek Soup

Ingredients

Good Dash olive oil
1 onion, chopped
2 garlic cloves, peeled and finely chopped
2 large leeks, chopped

600ml hot vegetable stock –
600ml whole milk
salt and freshly ground black pepper
4 tbsp double cream, to serve
4 tsp chopped fresh chives, to serve

Method

Heat the olive oil in a large saucepan, add the onion, garlic and leek and sauté for 4-5 minutes, or until softened but not coloured.

Add the vegetable stock, milk and seasoning and bring to the boil. Simmer for six minutes, then remove from the heat and allow to cool slightly. Pour into a food processor and blend until smooth.

To serve, pour into a bowl and garnish with a swirl of double cream and the chopped chives.
