Tally Ho For Pimms Lollies!

Serve these naughty little Pimms lollies instead of a bigger dessert at a summer barbecue and you’ll be the hostess with the mostess. Remember you’ll need lolly sticks and lolly moulds. Alternatively, you can use larger shot glasses as the moulds: place the strawberry, mint and orange zest into the glass and fill with the Pimms mixture. Freeze for one hour, or until the lollies are partially frozen, then insert the lolly sticks and continue to freeze until completely frozen. To be honest, these are so good, why wait for a BBQ!

Pimms Lollies

Makes around 10-12

Ingredients
300ml/½ pint Pimms, or similar ‘fruit cup
850ml/1½ pints lemonade of Ginger Beer
a handful of fresh strawberries, hulled, halved or raspberries or blackberries
few sprigs fresh mint leaves only
1 orange, zest only. you can also try lime.

Method
Mix the Pimms, lemonade or ginger beer together in a large jug.
Place a couple of strawberry halves or other fruits, a few mint leaves and a little of the zest into each lolly mould.
Pour the Pimm mixture into each mould until three-quarters full. Insert the lolly sticks, add the lids and freeze for 2-3 hours, or until frozen solid.

To remove the lollies, dip the moulds briefly in hot water and carefully remove.
